Ingredients (Serves 1)

  • 1.5 cups cottage cheese

  • 1 tablespoon lemon juice

  • 1–2 cloves garlic, chopped

  • 1 teaspoon oregano

  • 1 teaspoon parsley, chopped

  • 1.5 cups baby spinach

  • Sliced pickles, to taste

  • 2 slices Ezekiel bread, lightly toasted (plus optional 1 extra slice for dip)

  • Salt and pepper, to taste

Instructions

  1. Prepare the cottage cheese mix: In a small bowl, combine cottage cheese, lemon juice, garlic, oregano, parsley, salt, and pepper. Mix well.

  2. Prepare the spinach: Wash baby spinach and use fresh, or blend leftover spinach into the cottage cheese for added nutrients.

  3. Assemble the sandwich: On toasted Ezekiel bread slices, layer baby spinach, sliced pickles, and a generous spread of the cottage cheese mixture.

  4. Serve with dip: Serve any remaining cottage cheese mixture as a dip on a third slice of Ezekiel bread or as a side.

Meal Prep Tip

  • Batch prep: Mix cottage cheese, garlic, lemon, and herbs in advance and store in the fridge for up to 2–3 days.

  • Keep bread fresh: Toast bread just before serving to maintain crispness.
