Mediterranean Cottage Cheese Sandwich - Meal 1 Option
A protein-packed, flavorful sandwich with a Mediterranean twist. Perfect for lunch, a light dinner, or meal prep, with extra cottage cheese dip for snacking or spreading.

Ingredients (Serves 1)
1.5 cups cottage cheese
1 tablespoon lemon juice
1–2 cloves garlic, chopped
1 teaspoon oregano
1 teaspoon parsley, chopped
1.5 cups baby spinach
Sliced pickles, to taste
2 slices Ezekiel bread, lightly toasted (plus optional 1 extra slice for dip)
Salt and pepper, to taste
Instructions
Prepare the cottage cheese mix: In a small bowl, combine cottage cheese, lemon juice, garlic, oregano, parsley, salt, and pepper. Mix well.
Prepare the spinach: Wash baby spinach and use fresh, or blend leftover spinach into the cottage cheese for added nutrients.
Assemble the sandwich: On toasted Ezekiel bread slices, layer baby spinach, sliced pickles, and a generous spread of the cottage cheese mixture.
Serve with dip: Serve any remaining cottage cheese mixture as a dip on a third slice of Ezekiel bread or as a side.
Meal Prep Tip
Batch prep: Mix cottage cheese, garlic, lemon, and herbs in advance and store in the fridge for up to 2–3 days.
Keep bread fresh: Toast bread just before serving to maintain crispness.
