Chicken Spinach Toast - Meal 1 Option
A simple, protein-packed, and nutrient-rich open-faced sandwich. Perfect for breakfast, lunch, or a quick snack that keeps you full and energized.

Ingredients (Serves 1)
1 grilled chicken breast, sliced thin (6 oz)
1.5 cups fresh spinach (or lightly sautéed with garlic)
2 tomato slices
1–2 tablespoons cottage cheese (for spread)
2 slices toasted Ezekiel bread
Salt and pepper, to taste
Optional: sprinkle of paprika, oregano, or fresh herbs
Instructions
Prepare the bread: Toast the Ezekiel bread slices until golden brown.
Prepare the spread: Lightly spread cottage cheese on each slice of toast.
Layer ingredients: On each toast slice, layer spinach, tomato slices, and thinly sliced grilled chicken.
Season: Sprinkle with salt, pepper, and optional herbs or spices.
Serve: Enjoy immediately as an open-faced sandwich.

Batch prep: Grill multiple chicken breasts and wash spinach in advance. Store separately in airtight containers.
